This is the blade unit for the small chutney jar — the one that does the fine, high-speed work: coconut chutney, ginger-garlic paste, small masalas, coffee, dry spices and podis. Chutney blades are ground and set differently from wet and dry grinding blades. The pitch and angle are made for small quantities at high speed, pulling ingredients down into a tight cutting zone so you get a fine, even paste instead of a coarse mix with unground pieces stuck to the sides. Fitting a wet-grinding blade in a chutney jar will not give the same result. Replace the blade when chutney comes out coarse or takes several extra runs, when ingredients stay stuck at the sides while the centre over-grinds, when the blades are visibly blunt, chipped, bent or rusted, when the blade wobbles or the jar rattles in use, when the shaft feels rough or seized turned by hand, or when the jar has started leaking from the base.
